  • A glass of vegetable stock
  • 1 clove garlic
  • 1 dessert spoon of apple cider vinegar
  • White pepper to taste
  • 2 fresh mint leaves

Preparation

  1. Peel the cucumber and grate it over a bowl to collect the juice, sprinkle with salt and let stand 1h.
  2. Chop the garlic finely, add the cucumber and pass it all through the blender. Add the cream, vinegar and mint leaves. Season to taste with salt and pepper.
