Salmon with dried fruit crust

In this recipe we show you how to prepare salmon with a nut crust. You will see that besides being simple, it is a recipe that adds an extra crunchiness to the salmon. At the end of this article, you will find a video with the recipe versioned by Jeffrey Ruiz, head chef of Plaça del Vi 7 (Gerona) of the Roca brothers.

Properties

Salmon is a superfood. It is one of the fish with less saturated fat and more content of omega-3 fatty acids, whose main benefit is to help heart health.

But that's not all. It is also an excellent source of high quality protein, vitamins and minerals including potassium, selenium and vitamin B12, ideal for keeping the thyroid and intestine functioning properly. It is also good for the heart because it helps regulate blood pressure.

Nor could we fail to mention its vitamin D content, responsible for contributing to the formation of bone structure and stronger bones.

If to all this we add the properties of nuts such as walnuts, almonds and pistachios... We have a very nutritious and tasty dish.

Ingredients

  • 300 gr of salmon in a loin
  • 20 gr of walnuts
  • 20 gr of sliced almonds
  • 20 gr of pistachios
  • 5 ml of olive oil
  • 1 zucchini

Preparation

  1. We will mix the different nuts to make a granular mixture with which we will make a crust to the salmon.
  2. With a brush, lightly brush the salmon loin with a little oil and then place it on the dish with the nut mixture, pressing it so that the crust adheres to it.
  3. In a dish we will make a bed of zucchini slices and put the salmon. Bake for 10 minutes after preheating the oven to 220º C.
