Zucchini boats stuffed with goat cheese (2 persons)

  • 1 medium zucchini
  • 2 cloves garlic
  • 4 tablespoons olive oil
  • 100g chicken meat (minced)
  • 40g of spinach sprouts
  • salt and pepper to taste
  • 225g goat cheese

Preparation of zucchini boats stuffed with goat cheese

  1. Preheat the oven to 180ºC.
  2. Cut the zucchini in half lengthwise and, using a spoon, scoop out the seeds (but do not throw them away) and place the boats in a frying pan.
  3. Peel the garlic cloves, finely chop them and fry them in olive oil in a frying pan over medium heat until golden brown. Add the minced chicken meat and brown it with the garlic. When almost cooked, add the spinach sprouts and zucchini seeds. Season with a pinch of salt and ground black pepper.
  4. Spread the cooked chicken with the spinach and zucchini on the zucchini boats and top with the goat cheese (crumbled).
  5. Bake the zucchini boats stuffed with goat cheese in the oven for approximately 20 - 25 minutes. Once golden brown, season with a little freshly ground black pepper before serving.
