Healthy flourless pancakes

The best thing about crepes is that they start from a very basic but extremely versatile recipe. We can make them to taste, adjusting the size, thickness and playing with ingredients and flavors. Breakfast, lunch, dessert, snack or dinner, sweet or savory; the possibilities are almost endless and the only limit is your imagination. Let's get to work!

Ingredients

  • 2 eggs
  • 125 ml whipping cream
  • 30 ml of water
  • 1/10 teaspoon salt
  • 1/2 tbsp (4g) psyllium husk powder or ground flax or 1/2 tbsp chia seeds
  • 20 gr of butter

Preparation

  1. In a bowl, mix the eggs, cream, water and salt with a hand mixer.
  2. Gradually incorporate the powdered psyllium husk while continuing to whisk until a uniform dough is obtained. Set aside for at least 10 minutes.
  3. Fry in butter as if they were normal pancakes.
