Recipe: Salmon rolls

Ingredients

-For the rolls

  • 4 corn pancakes (fajita).
  • 250g smoked salmon
  • 1 leek
  • 1 chive
  • 1 avocado

 

-For the fit mayonnaise

  • 1 egg
  • 2 yolks
  • 1 teaspoon mustard
  • 1 lemon (or 2 tablespoons lemon juice)
  • Salt
  • 3/4 cup olive oil.

 

Step by step:

We start preparing the mayonnaise. In a bowl, place the egg, the 2 egg yolks, the mustard and the salt. With a blender or mixer, beat well for 40 seconds and then, while blending, add the oil on one side of the bowl (in the form of a fine thread), with patience and great care so as not to cut it. You have to blend until you see that it takes a smooth and semi-solid consistency, not liquid, because that will mean that it has been cut and you will have to start again. Let the mayonnaise rest in the refrigerator for about 30 minutes.

In a separate frying pan cut the leek into very small cubes. Do the same with the chives and add both ingredients to a frying pan with oil. Brown the mixture and remove it from the heat when it is golden brown and pour it on a plate with kitchen paper so that it absorbs the excess oil (we do not want it to be extra oily).

Cut the avocado in 2 parts and with the help of a knife cut it into strips.

We put our fajita pancakes in a frying pan. We pass them back and forth until they are golden brown and you see that they take a softer and more moldable consistency.

Remove the mayonnaise from the refrigerator and add a teaspoon to the base of our fajitas.

Then add the leek mixture with the chives on top of the mayonnaise and the avocado in strips.

Finally, cut the 250g of smoked salmon into strips and add on top of the mixture.
